These apple oatmeal muffins are a perfect healthy and delicious breakfast option that is easily portable for on-the-go mornings. The addition of apple sauce adds a natural sweetness and moisture to the muffins.

Ingredients:

Yield: 12 servings
1 cup of old-fashioned rolled oats
1 cup of all-purpose flour
1/3 cup of brown sugar
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of salt
1/2 cup of milk, or a non-dairy alternative
1/4 cup of vegetable oil
1 egg
1/2 teaspoon of vanilla extract
1/2 cup of unsweetened apple sauce
Optional toppings: chopped nuts, raisins, or shredded coconut

Instructions:

Step 1
Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
Step 2
In a large mixing bowl, combine the oats, flour, brown sugar, baking powder, baking soda, and salt.

In a separate bowl, whisk together the milk, oil, egg, vanilla extract, and apple sauce.
Step 4
Pour the wet ingredients into the dry ingredients and stir until just combined.

Fold in your desired toppings.
