Arepas are a traditional dish from Venezuela and Colombia. Ingredients:

2 cups of pre-cooked cornmeal
2 cups of warm water
1 teaspoon of salt
1 cup of shredded beef or chicken
1 peeled and mashed avocado
1/2 cup of grated cheese
2 tablespoons of oil for cooking
Instructions:
Step 1
In a large bowl, mix the cornmeal and salt together. Slowly pour in the warm water, stirring constantly, until you have a smooth dough that holds together and separates from the sides of the bowl.
Step 2
Take a small amount of the dough and roll it between your hands to form a ball. Press the ball between your palms to form a disk, about 1/2 inch thick. Repeat until you have used up all the dough.

Heat up a large skillet or griddle over medium heat. Brush the skillet with a small amount of oil. Once hot, add the arepas to the skillet and cook for 5-7 minutes per side, or until golden and crispy.

In a separate pan, heat up the shredded meat until warm. Remove from heat and set aside.

Slice the arepas in half, creating a pocket. Spread the mashed avocado on one half of the arepa. Fill the arepa with the shredded meat and cheese.

Place the arepas back on the skillet, fold the other half of the arepa over the filling, and press down gently with a spatula. Cook for another 2-3 minutes, or until the cheese is melted and the filling is warmed through.
