This refreshing and tangy dessert pie is inspired by the popular Baja Blast drink from Taco Bell. The combination of lime, blue raspberry, and creamy filling make for a unique and delicious treat that is perfect for summer gatherings or any time you want to spice up your dessert game.

Ingredients:

Yield: 8 servings
1 pre-made graham cracker pie crust
1 (14 ounce) can of sweetened condensed milk
6 ounces of Baja Blast soda, chilled
1/2 cup of lime juice, fresh squeezed
1/4 cup of blue raspberry syrup
4 egg yolks
Whipped cream and lime zest to garnish

Instructions:

Step 1
Preheat the oven to 350°F.
Step 2
In a large mixing bowl, whisk together the condensed milk, Baja Blast soda, lime juice, blue raspberry syrup, and egg yolks until well combined.

Pour the mixture into the pre-made graham cracker pie crust.
Step 4
Bake the pie for 15 minutes, then reduce the oven temperature to 325°F and bake for an additional 10 minutes. The filling should be set but still slightly jiggly in the center.

Remove the pie from the oven and let it cool to room temperature, then chill it in the refrigerator for at least two hours.
