These vegetarian tacos are the perfect way to spice up Taco Tuesday. The buffalo cauliflower is crispy and spicy, while the avocado crema provides a cool and creamy balance. These tacos are perfect for a quick and easy weeknight dinner.

Ingredients:

Yield: 4 servings
1 head of cauliflower, stemmed and cut into bite-sized florets
1 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup buffalo sauce
8 small tortillas
1 avocado, pitted and mashed
1/4 cup sour cream
1/4 cup chopped fresh cilantro
1 lime, cut into wedges

Instructions:

Step 1
Preheat your oven to 450°F (230°C).
Step 2
In a large mixing bowl, whisk together flour, garlic powder, paprika, salt, and black pepper.
Step 3
Dip each cauliflower floret in the flour mixture, shaking off any excess flour, and place the florets on a greased baking sheet.
Step 4
Bake the cauliflower in the oven for 20 minutes or until crispy and golden brown, turning the florets over halfway through cooking.

Remove the cauliflower from the oven and toss it in buffalo sauce.
Step 6
In a small mixing bowl, prepare the avocado crema by combining mashed avocado, sour cream, and chopped cilantro.

Wrap the tortillas in aluminum foil and heat them in the oven for 5 minutes.

Assemble the tacos by placing a few pieces of buffalo cauliflower on each tortilla, and topping it with a spoonful of avocado crema.

Garnish the tacos with additional chopped cilantro and a squeeze of lime juice.
