1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1/2 cup all-purpose flour
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup buffalo sauce
2 tablespoons unsalted butter
1/2 cup warm water
1/4 cup granulated sugar
2 teaspoons active dry yeast
2 cups all-purpose flour
1 teaspoon salt
1/4 cup vegetable oil
2 cups coleslaw mix
1/4 cup crumbled blue cheese
1/4 cup mayonnaise
1 tablespoon apple cider vinegar
Salt and freshly ground black pepper, to taste
1/4 cup shredded carrots
Instructions:
Step 1
In a bowl, mix together the flour, garlic powder, onion powder, paprika, salt, and pepper. Coat the chicken pieces in the flour mixture and set aside.
Step 2
In a large skillet over medium heat, melt the butter. Add the chicken and cook until no longer pink, about 8-10 minutes.
Step 3
Pour the buffalo sauce over the chicken and stir to coat. Cook for an additional 2-3 minutes, until the sauce thickens and coats the chicken. Set aside.

In a small bowl, whisk together the warm water and sugar. Sprinkle the yeast over the top and let sit for 10 minutes, or until foamy.

In a separate bowl, mix together the flour and salt. Add the yeast mixture and stir to form a dough.

Knead the dough on a floured surface for about 10 minutes, until smooth and elastic.

Place the dough in a greased bowl and cover with a towel. Let rise in a warm place for 1 hour, or until doubled in size.

Punch down the dough and divide into 12 equal pieces. Roll each piece into a ball and let rest for 10 minutes.

Roll each ball into an oval shape, about 1/4 inch thick. Brush with vegetable oil and fold in half. Place onto a parchment-lined baking sheet and cover with a towel. Let rise for 30 minutes.

Preheat the oven to 375°F. Bake the bao buns for 10-12 minutes, until lightly golden on top.

In a medium bowl, mix together the coleslaw mix, blue cheese, mayonnaise, and apple cider vinegar. Season with salt and pepper to taste.

Open each bao bun and fill with a spoonful of the buffalo chicken. Top with shredded carrots and a dollop of the blue cheese slaw. Serve immediately.
