Ingredients:

4 boneless, skinless chicken breasts
1 cup of all-purpose flour
2 eggs, beaten
2 cups of panko bread crumbs
1 tsp of garlic powder
1 tsp of onion powder
1/2 tsp of dried oregano
1/2 tsp of dried basil
1/2 tsp of salt
1/4 tsp of black pepper
1 cup of grated Parmesan cheese
1/2 cup of prepared chimichurri sauce
4 slices of mozzarella cheese
2 tbsp of olive oil
Instructions:
Step 1
Preheat the oven to 375°F (190°C).
Step 2
Rinse the chicken breasts and pat them dry with a paper towel.
Step 3
Set up a breading station by placing the flour in one bowl, the beaten eggs in another bowl, and the panko bread crumbs, garlic powder, onion powder, oregano, basil, salt, and black pepper in a third bowl. Mix well to combine.
Step 4
Dredge the chicken breasts in the flour, shaking off any excess. Then dip them in the beaten eggs, allowing any excess to drip off. Finally, coat them completely in the seasoned bread crumbs, pressing gently to adhere.
Step 5
Heat the olive oil in a large nonstick skillet over medium-high heat. Once hot, add the chicken breasts and cook for 3-4 minutes per side or until golden brown and crispy.
Step 6
Transfer the chicken breasts to a baking dish and spoon the chimichurri sauce on top of each chicken breast.
Step 7
Sprinkle the Parmesan cheese over the chimichurri sauce and add a slice of mozzarella cheese on top of each chicken breast.
Step 8
Bake in the preheated oven for 10-12 minutes or until the cheese is melted and bubbly.
Step 9
Let the chicken rest for a few minutes before serving. Enjoy hot with a side of pasta or crusty bread.
