This spicy and savory cornbread is the perfect blend of sweet corn and smoky chipotle flavors. It is perfect as a side dish or as a snack and will leave your taste buds craving for more.

Ingredients:

1 cup cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper
2 tablespoons honey
1/4 cup unsalted butter, melted
1/4 cup vegetable oil
2 eggs
1 cup buttermilk
2 tablespoons canned chipotle peppers in adobo sauce, finely chopped

Instructions:

Step 1
Preheat your oven to 400 degrees Fahrenheit. Grease a cast iron skillet or a 9-inch baking dish with cooking spray.
Step 2
In a medium-sized bowl, combine the cornmeal, flour, baking powder, salt, baking soda, garlic powder, onion powder, and black pepper. Mix well until everything is evenly combined.
Step 3
Add the honey, melted butter, vegetable oil, eggs, and buttermilk to the dry ingredients. Mix everything together until just combined.
Step 4
Add in the finely chopped chipotle peppers and mix to distribute them throughout the batter.

Pour the batter into the greased skillet or baking dish. Smooth out the top with a spatula.

Bake the cornbread for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
