This circular breakfast sandwich is the perfect way to start your day. The combination of fluffy eggs, crispy bacon, and melty cheese sandwiched between two english muffins will have you wanting seconds every time.

Ingredients:

Yield: 2 servings
2 english muffins
2 large eggs
2 slices of cheddar cheese
4 slices of bacon
2 tablespoons of butter

Instructions:

Step 1
Start by preheating your oven to 375 degrees Fahrenheit.
Step 2
Then, start frying the bacon in a non-stick pan over medium heat until crispy. Remove from the pan and set aside on a paper towel to cool.
Step 3
In the same pan, melt 1 tablespoon of butter over medium heat.
Step 4
Crack two eggs and add them to the pan. Cook until the whites are set but the yolks are still runny, about 2-3 minutes.
Step 5
Meanwhile, cut the english muffins in half and place them in the oven to toast for 5 minutes.
Step 6
Once the english muffins are lightly toasted, spread the remaining butter on them.
Step 7
Place a slice of cheese on the bottom half of each english muffin.
Step 8
Once the eggs are cooked, use a circular cookie cutter to cut out two circles of egg, making sure they are the same size as the english muffins.
Step 9
Place one circle of egg on top of the cheese on each english muffin.
Step 10
Break the bacon slices in half and place them on top of the egg.
Step 11
Place the top half of the english muffin on the bacon and gently press down to create a sandwich.
Step 12
Wrap each sandwich in foil and place them in the oven for 5-7 minutes.
Step 13
Remove from the oven, unwrap the foil, and serve hot with your favorite breakfast beverage.
