This creamy and vibrant soup is perfect for a cozy lunch or a light dinner. Ingredients:

Yield: 4-6 servings
1 lb. of carrots, peeled and chopped
1 onion, chopped
2 cloves of garlic, chopped
1 inch piece of ginger, peeled and chopped
4 cups of vegetable or chicken broth
1/2 cup of heavy cream
2 tablespoons of olive oil
Salt and pepper to taste

Instructions:

Step 1
Heat the olive oil in a large pot over medium heat. Add the onions and sauté for 2-3 minutes until they become translucent.
Step 2
Add the garlic and ginger and sauté for another minute until fragrant.
Step 3
Add the chopped carrots and broth to the pot. Bring to a boil, then reduce the heat and let simmer for 20-25 minutes until the carrots are tender.

Remove the pot from the heat and let cool for a few minutes before blending the soup in a blender or with an immersion blender until completely smooth.
Step 5
Return the soup to the pot and stir in the heavy cream. Heat over low heat until warmed through. Be careful not to let the soup boil.

Season with salt and pepper to taste.

Serve the soup hot, garnished with croutons or a dollop of sour cream if desired.
