Ingredients:

4 large russet potatoes, peeled and chopped into chunks
4 cloves of garlic, peeled
1/4 cup olive oil
1/2 cup unsweetened almond milk or any preferred plant-based milk
Salt to taste
Freshly ground black pepper to taste
2 tablespoons chopped fresh chives (optional)
1 tablespoon nutritional yeast (optional for a cheesy flavor)

Instructions:

Step 1
Begin by placing the peeled and chopped potatoes and garlic cloves into a large pot. Cover them with cold water, ensuring there's about an inch of water above the potatoes.
