Ingredients:

2 cups all-purpose flour
2 teaspoons active dry yeast
2 tablespoons sugar
1/2 teaspoon salt
1/2 cup warm milk
1/4 cup warm water
2 tablespoons unsalted butter, melted
1 egg, beaten
Sesame seeds (optional)
1 pound ground beef, preferably 80% lean
1 large egg
1/2 cup bread crumbs
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup mayonnaise
2 tablespoons ketchup
1 tablespoon sweet pickle relish
1 teaspoon white vinegar
1 teaspoon sugar
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon paprika
2 cups celery, chopped
1 1/2 cups vegetable or chicken broth
1/2 cup heavy cream
Salt and pepper to taste
1 cup ketchup
1/2 teaspoon sodium bicarbonate (baking soda)
1 cup water
Vegetable oil for frying
Instructions:
Step 1
In a large bowl, mix together the flour, yeast, sugar and salt.
Step 2
Add in the warm milk, warm water, melted butter and beaten egg. Mix with a wooden spoon until well combined.
Step 3
Knead the dough on a floured surface for 5-7 minutes until it becomes smooth and elastic.
Step 4
Cover the dough with a clean cloth and let it rise for 1-2 hours in a warm place until it doubles in size.
Step 5
Punch down the dough and divide it into 8 equal sized balls.
Step 6
Place the balls on a baking sheet lined with parchment paper, cover with a cloth and let them rest for 10 minutes.

Preheat the oven to 375°F (190°C).
Step 8
Brush the top of the buns with some water, and sprinkle sesame seeds on top.

Bake for 18-20 minutes until the buns are golden brown. Set aside to cool.

In a large mixing bowl, combine the ground beef, egg, bread crumbs, Worcestershire sauce, salt and pepper. Use your hands to mix until everything is well combined.

Divide the mixture into 8 equal parts and shape them into flattened rounds.

Heat a large frying pan over medium-high heat. Add the patties, and cook for 6-8 minutes on each side until they reach an internal temperature of 160°F (71°C).

Set aside to cool.

In a small mixing bowl, whisk together the mayonnaise, ketchup, sweet pickle relish, white vinegar, sugar, onion powder, garlic powder, and paprika.

Cover and refrigerate until ready to use.

In a blender, puree the celery and broth until smooth.

Transfer the mixture to a medium-sized pot and heat on low heat until it starts to simmer.

Add the heavy cream and stir to combine. Cook for 5 more minutes.

Remove from heat and let it cool for a couple of minutes.

Using a hand blender, blend the mixture until it becomes foamy. Add salt and pepper to taste.

Transfer to a container and set aside.

Mix the ketchup, bicarbonate and water in a jug until well combined.

Pour the mixture into a spherification dish or ice cube tray, and freeze for at least 2 hours or overnight.

Heat some vegetable oil in a frying pan.

Remove the ketchup spheres from the dish or tray and gently place them in the hot oil.

Cook for a few seconds until they float to the surface and become crispy. Drain on paper towels.

Set aside.

Place a bun at the center of the plate.

Add a patty on top of the bun, followed by a spoonful of special sauce.

Repeat with another bun, patty, and special sauce.

Top with a spoonful of celery foam.
