This homemade beef jerky recipe is a fresh and spicy twist on a classic snack. The combination of fresh pineapple, honey, bourbon, and scorpion pepper makes for a delicious and addictive flavor. The recipe is easy to follow and can be tailored to your desired level of spiciness. It is made using a dehydrator for optimal drying and texture.

Ingredients:

Yield: 4-6 servings
1 pound flank steak, sliced into thin strips against the grain
2 cups of fresh pineapple chunks
1/4 cup of honey
1/4 cup of bourbon
1 teaspoon of scorpion pepper flakes
1 teaspoon of garlic powder
1/2 teaspoon of onion powder
1/2 teaspoon of smoked paprika
1/4 teaspoon of black pepper
1/4 teaspoon of salt

Instructions:

Step 1
In a blender or food processor, puree the fresh pineapple until it is completely smooth.
Step 2
In a large bowl, mix together the pineapple puree, honey, bourbon, scorpion pepper flakes, garlic powder, onion powder, smoked paprika, black pepper, and salt.
Step 3
Add the flank steak strips to the bowl and toss to coat. Make sure that each piece is evenly coated in the marinade.
Step 4
Cover the bowl with plastic wrap and refrigerate for at least 2 hours or up to 24 hours. The longer the meat marinades, the more flavor it will absorb.
Step 5
Prepare your dehydrator according to the manufacturer's instructions by setting it to 160°F (71°C).
Step 6
Remove the beef strips from the marinade and pat them dry with paper towels.
Step 7
Lay the beef strips flat on the dehydrator trays, making sure that they are not touching each other.
Step 8
Place the trays in the dehydrator and let the beef strips dry for 4-6 hours, or until they are completely dry and chewy.
Step 9
Check the beef strips regularly to make sure that they are drying evenly. You may need to rotate or switch the trays around for optimal drying.
Step 10
Once the beef jerky is done, let it cool completely before storing it in an airtight container. Store it in a cool, dry place.
Step 11
Enjoy your homemade Dehydrated Pineapple Honey Bourbon Scorpion Pepper Beef Jerky!
