Get ready for a truly indulgent and delicious meal with this drunken tomato and cheese pasta recipe. The addition of red wine elevates the classic creamy tomato sauce and pairs perfectly with the melted parmesan and mozzarella cheese and al dente pasta.

Ingredients:

Yield: 4 servings
8 oz dried pasta
1 can (14 oz) crushed tomatoes
1/2 cup whole milk
1/2 cup red wine
1/2 cup grated parmesan cheese
1/2 cup shredded mozzarella cheese
1 clove garlic, minced
1 teaspoon olive oil
Salt and pepper to taste
Fresh basil for garnish (optional)

Instructions:

Step 1
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining the pasta.
Step 2
While the pasta cooks, heat the olive oil in a large pan over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.

Add the red wine to the pan and let it simmer for 1-2 minutes until it reduces slightly.
Step 4
Add the crushed tomatoes to the pan and season with salt and pepper. Let the sauce simmer for 5-7 minutes, stirring occasionally.
Step 5
Add the milk and stir to combine. Let the sauce simmer for another 2-3 minutes until it thickens slightly.
Step 6
Add the parmesan cheese to the sauce and stir until it melts. Add the mozzarella cheese and stir until it melts and combines with the sauce.
Step 7
Add the cooked pasta to the pan with the sauce and toss to coat. If the sauce is too thick, add the reserved pasta water a little at a time until you reach your desired consistency.
Step 8
Serve hot, garnished with fresh basil if desired. Pair with a glass of red wine for the ultimate indulgent experience.
