This simple and healthy Kale side dish is packed with nutrients and flavor. The garlic and olive oil infuse the kale with a delicious aroma, while the lemon juice adds a refreshing tanginess.
Ingredients:
Yield: 2-4 servings
1 bunch of fresh Kale, washed and de-stemmed
2 cloves of garlic, minced
1 tablespoon of olive oil
1 tablespoon of lemon juice
Salt and pepper, to taste
Instructions:
Step 1
Prepare the kale by washing it thoroughly and removing the tough stems. Roughly chop the kale into bite-sized pieces.
Step 2
Heat the olive oil in a skillet over medium heat. Add minced garlic and cook until it's fragrant.
Step 3
Add the chopped kale to the skillet and stir to coat it with the garlic oil. Cook for 3-4 minutes, until the kale starts to wilt.
Step 4
Reduce the heat to low and add 1 tablespoon of water to the skillet. Cover and cook until the kale is fully wilted and tender, about 10-15 minutes.
Step 5
Remove the lid and stir in the lemon juice. Season with salt and pepper to taste.
Step 6
Serve hot as a side dish or a healthy vegan main course.
