This healthy and flavorful updated version of the traditional garlic kale saute incorporates the latest food trends of 2024 with the addition of protein-rich tofu and nutrient-packed ancient grains. The garlic and coconut oil infuse the kale and tofu with a delicious aroma and the miso paste adds a unique and umami-rich flavor. Ingredients:

Yield: 2-4 servings
1 bunch of fresh kale, washed and de-stemmed
1/2 block of extra-firm tofu, pressed and cubed
1 cup of cooked ancient grains, such as farro or freekeh
2 cloves of garlic, minced
2 tablespoons of coconut oil
1 tablespoon of miso paste
Salt and pepper, to taste

Instructions:

Step 1
In a medium pot, cook the ancient grains according to package instructions until tender.
Step 2
Meanwhile, prepare the kale by washing it thoroughly and removing the tough stems. Roughly chop the kale into bite-sized pieces.
Step 3
Heat the coconut oil in a large skillet over medium heat. Add minced garlic and cook until fragrant.
Step 4
Add cubed tofu to the skillet and stir to coat with the garlic oil. Cook for 3-4 minutes until tofu starts to brown.
Step 5
Add kale to the skillet and stir to combine with tofu. Cook for 3-4 minutes until kale starts to wilt.
Step 6
Reduce heat to low and add 1/4 cup of water to the skillet. Cover and cook until the kale is fully wilted and tender, about 10-15 minutes.
Step 7
Remove the lid and stir in the cooked ancient grains, miso paste, salt, and pepper. Cook for an additional 2-3 minutes to allow the flavors to meld together.
Step 8
Serve hot as a filling and nutritious vegan main course or as a side dish. Enjoy the perfect combination of flavor and health!
