This coffee cake is an easy and delicious dessert that makes use of your Keurig coffee maker. The cake is fluffy and moist, with a cinnamon and sugar streusel topping that pairs perfectly with a cup of coffee.

Ingredients:

1 cup all-purpose flour
1/2 cup granulated sugar
1/4 cup vegetable oil
1/4 cup strongly brewed coffee, cooled
1/4 cup sour cream
1/4 cup milk
1 large egg
1 tsp baking powder
1/4 tsp salt
1/2 cup all-purpose flour
1/4 cup brown sugar
1 tsp cinnamon
1/4 cup unsalted butter, melted

Instructions:

Step 1
Start by preheating your oven to 350°F. Grease a 9-inch square baking pan and set aside.

In a medium bowl, whisk together the flour, sugar, baking powder, and salt.

In another bowl, mix together the oil, coffee, sour cream, milk, and egg. Gradually fold in the dry ingredients until well combined.

Pour the batter into the prepared baking pan and smooth out the surface with a spatula.
