This dish is a comforting combination of sweet and savory flavors. The rich and earthy taste of the leeks is perfectly balanced by the sweet and creamy sweet potatoes.

Ingredients:

Yield: 4 servings
2 medium-sized sweet potatoes, peeled and cubed into 1-inch pieces
2 medium-sized leeks, sliced into thin rounds
2 cloves of garlic, minced
2 tablespoons of olive oil
1 teaspoon of dried thyme
1 teaspoon of smoked paprika
Salt and pepper, to taste

Instructions:

Step 1
Preheat the oven to 375°F (190°C).
Step 2
In a large bowl, toss the sweet potatoes and leeks with the olive oil, minced garlic, thyme, smoked paprika, and a pinch of salt and pepper. Make sure that the vegetables are coated evenly.
Step 3
Spread the vegetables in a single layer on a baking sheet and roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and lightly browned. Make sure to stir the vegetables halfway through, so they cook evenly on both sides.
Step 4
Once done, remove the baking sheet from the oven and let the vegetables cool for a few minutes before serving.
Step 5
Spoon the roasted sweet potatoes and leeks into a serving dish and enjoy!
