This creamy and fruity mango custard is the perfect dessert to enjoy on a warm summer day. The rich and decadent custard is infused with fresh mango puree, creating a dessert that is both refreshing and satisfying.
Ingredients:
Yield: 6-8 servings
2 cups fresh mango, peeled and chopped
1/2 cup sugar
1/2 cup cornstarch
4 cups milk
6 egg yolks
1 tablespoon vanilla extract
Instructions:
Step 1
Begin by pureeing the fresh mango in a blender until smooth and set aside.
Step 2
In a mixing bowl, whisk together the sugar and cornstarch until well combined.
Step 3
In a medium-sized saucepan, heat the milk over medium heat until it begins to simmer.
Step 4
Add the egg yolks to the mixing bowl with the sugar and cornstarch and whisk until smooth.
Step 5
Slowly pour the hot milk into the mixing bowl with the egg yolk mixture, whisking constantly to prevent the eggs from scrambling.
Step 6
Return the custard mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and coats the back of a spoon.
Step 7
Remove the custard from the heat and stir in the vanilla extract and mango puree until well combined.
Step 8
Pour the custard into a 1.5 quart baking dish and let it cool to room temperature.
Step 9
Once cooled, cover the baking dish with cling wrap and refrigerate for at least 2 hours, or until the custard is firm.
Step 10
Serve the mango custard chilled and garnish with fresh mango slices or whipped cream, if desired.
