These crispy and savory pancakes are a perfect way to enjoy matzo meal during Passover or any time of the year. The combination of matzo meal, eggs, and onions creates a delicious texture and flavor. Serve them hot with applesauce or sour cream for a delightful breakfast or brunch.

Ingredients:

Yield: 4-6 servings
1 cup matzo meal
1 onion, finely chopped
3 eggs, beaten
1/4 cup vegetable oil
1/4 tsp salt
1/4 tsp black pepper
apple sauce or sour cream, for serving

Instructions:

Step 1
In a large bowl, mix together matzo meal, onion, eggs, vegetable oil, salt and black pepper. Mix until everything is well-combined.
Step 2
Heat a non-stick pan on medium heat. Add 1 tablespoon of oil to the pan.
Step 3
Take a spoonful of the mixture and drop it into the pan. Use the back of the spoon to spread the mixture into a round shape. Repeat with the remaining mixture, making sure to leave some space between each pancake.
Step 4
Cook the pancakes for 3-4 minutes or until crispy and golden brown. Flip the pancakes over with a spatula and cook for another 3-4 minutes or until crispy and golden brown on the other side.
Step 5
Serve hot with apple sauce or sour cream. Enjoy the delicious taste of matzo meal in every bite!
