A warm and hearty stew that combines the earthy flavors of mushrooms with the creamy tanginess of yogurt, balanced by a rich and flavorful tomato sauce. This dish is perfect for a cozy night in, and can easily be customized to your liking with additional vegetables or spices.

Ingredients:

Yield: 4-6 servings
4 cups chopped mushrooms, any variety you prefer
1 cup plain Greek yogurt
1 cup tomato sauce
1 onion, diced
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried oregano
Salt and pepper to taste
4 cups vegetable broth

Instructions:

Step 1
Heat olive oil in a large pot over medium-high heat. Add onions and garlic, and sauté until onions are translucent and garlic is fragrant.
Step 2
Add chopped mushrooms to the pot, and stir until the mushrooms are coated in the olive oil mixture. Sauté for 5 minutes, stirring occasionally.
Step 3
Add vegetable broth, tomato sauce, dried oregano, salt and pepper to the pot, and stir to combine everything. Bring to a boil, then lower heat to a gentle simmer.
Step 4
Cover the pot and let the stew simmer for at least 20 minutes, or until the mushrooms have softened and the sauce has thickened.
Step 5
Stir in the Greek yogurt to the pot, and continue simmering for an additional 5 minutes until the yogurt has fully incorporated and the stew has a creamy texture.
Step 6
Serve hot, garnished with your choice of fresh herbs or spices.
