Chilean sea bass is a prized fish known for its rich flavor and buttery texture. This recipe combines the delicate flavors of the fish with a zesty lemon butter sauce, making it a perfect dish for a special occasion or a romantic dinner for two.

Ingredients:

Yield: 2 servings
2 6-ounce Chilean sea bass fillets
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter, divided
1 small shallot, minced
1/2 cup dry white wine
1/4 cup chicken broth
2 tablespoons fresh lemon juice
1 tablespoon chopped fresh parsley leaves

Instructions:

Step 1
Rinse the Chilean sea bass fillets and pat them dry with paper towels. In a shallow bowl, mix together the flour, salt, and black pepper.
Step 2
Dredge the sea bass fillets in the flour mixture, shaking off any excess.
Step 3
Heat the olive oil and 1 tablespoon of butter in a large non-stick skillet over medium-high heat. Add the fillets to the pan and cook until golden brown on both sides, about 3-4 minutes per side.

Remove the fish from the pan and transfer to a plate.

In the same pan, add the remaining tablespoon of butter and the minced shallot. Cook for 1-2 minutes until the shallot is soft and aromatic.

Add the white wine to the pan and reduce the heat to low. Simmer for 2-3 minutes until the wine has reduced by half.

Add the chicken broth and lemon juice to the pan and stir to combine. Cook for another 1-2 minutes until the sauce has thickened slightly.

Pour the lemon butter sauce over the pan-seared sea bass fillets. Garnish with chopped parsley and serve hot.
