This juicy and flavorful chicken dish is perfect for those who don't enjoy tomatoes or tomato sauce. Coated in a crispy parmesan crust, the chicken is tender and moist on the inside, with a pleasantly salty and nutty flavor from the cheese. Ingredients:

Yield: 4 servings
4 boneless, skinless chicken breasts
1 cup of all-purpose flour
2 eggs, beaten
2 cups of panko bread crumbs
1 cup of grated Parmesan cheese
1 tsp of garlic powder
1 tsp of onion powder
1/2 tsp of dried oregano
1/2 tsp of dried basil
1/2 tsp of paprika
1/2 tsp of salt
1/4 tsp of black pepper
2 tbsp of olive oil

Instructions:

Step 1
Preheat the oven to 375°F (190°C).
Step 2
Rinse the chicken breasts and pat them dry with a paper towel.
Step 3
Set up a breading station by placing the flour in one bowl, the beaten eggs in another bowl, and the panko bread crumbs, grated Parmesan cheese, garlic powder, onion powder, oregano, basil, paprika, salt, and black pepper in a third bowl. Mix well to combine.
Step 4
Dredge the chicken breasts in the flour, shaking off any excess. Then dip them in the beaten eggs, allowing any excess to drip off. Finally, coat them completely in the seasoned bread crumbs and Parmesan cheese mixture, pressing gently to adhere.

Heat the olive oil in a large nonstick skillet over medium-high heat. Once hot, add the chicken breasts and cook for 3-4 minutes per side or until golden brown and crispy.
Step 6
Transfer the chicken breasts to a baking dish and bake in the preheated oven for 15-20 minutes or until the chicken is fully cooked and the crust is golden brown and crispy.

Let the chicken rest for a few minutes before slicing and serving with a side of roasted vegetables or a green salad.
