This flavorful pasta dish uses a delicious blend of sun-dried tomatoes, basil, and Parmesan cheese to create a rich and savory red pesto sauce that pairs perfectly with your favorite pasta. It's a great option for a quick and easy weeknight dinner that the whole family will love.
Ingredients:

1 pound pasta, such as penne or fusilli
1/2 cup sun-dried tomatoes, drained and roughly chopped
1/2 cup fresh basil leaves, packed
1/2 cup grated Parmesan cheese, plus more for serving
1/3 cup pine nuts
2 garlic cloves, minced
1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper, to taste
Instructions:
Step 1
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente.
Step 2
While the pasta is cooking, make the red pesto sauce. In a food processor or blender, combine the sun-dried tomatoes, basil, Parmesan cheese, pine nuts, and garlic. Slowly pour in the olive oil while blending until the sauce is smooth and well combined. Season with salt and pepper to taste.
Step 3
Drain the cooked pasta and reserve 1 cup of the pasta cooking water. Return the pasta to the pot and add the red pesto sauce, stirring well to combine. If the sauce is too thick, add some of the reserved pasta water a little at a time until it reaches your desired consistency.
Step 4
Serve the red pesto pasta hot, garnished with additional Parmesan cheese and freshly ground black pepper, if desired.
