This roasted bell pepper recipe creates a sweet and smoky flavor that is perfect for salads, sandwiches, or as a side dish. Roasting brings out the natural sweetness of the bell peppers, while the olive oil and garlic add a depth of flavor that is irresistible.

Ingredients:

Yield: 4 servings
4 bell peppers (any color), halved and seeded
2 tablespoons olive oil
3 cloves of garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper

Instructions:

Step 1
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Step 2
Place the bell pepper halves on the prepared baking sheet, skin side up.

In a small bowl, mix together the olive oil, garlic, salt, and pepper. Brush the mixture generously over the bell peppers, making sure that each pepper half is well coated.

Roast the bell peppers in the preheated oven for 25-30 minutes, or until the skin is charred and the flesh is tender.

Remove the peppers from the oven and let them cool for a few minutes. Once they are cool enough to handle, peel off the skin and discard it. The flesh should be soft and tender.
