This sacred brunch offering is an indulgent and reverent way to start your day. Slow-cooked onions infused with aromatic spices replace bacon in this recipe, combined with fluffy eggs, creamy brie cheese, and a divine harissa aioli, sandwiched between freshly-baked sourdough bread. Each bite is a blessing that will leave you feeling truly uplifted and gratified.

Ingredients:

Yield: 4 servings
1 red onion, sliced into rings
1 tsp smoked paprika
1 tsp cumin
1 tsp garlic powder
1 tbsp olive oil
Salt and black pepper, to taste
2 tbsp harissa aioli
1 tbsp olive oil
A generous handful of chopped herbs, such as basil, thyme, or rosemary
4 large eggs
1 tbsp unsalted butter
Salt and black pepper, to taste
4 slices of brie cheese
4 slices of freshly-baked sourdough bread, toasted

Instructions:

Step 1
Preheat the oven to 350°F (175°C).
Step 2
Assemble the sliced red onion rings, smoked paprika, cumin, garlic powder, olive oil, salt, and black pepper in a mixing bowl. Toss until the onion is well coated with the sacred spices. Place on a baking sheet and roast in the preheated oven for about 30-35 minutes, until the onion is soft, golden, and fragrant. Set aside to offer to the gods.
Step 3
In another bowl, mix together the harissa aioli, olive oil, and chopped herbs. Set aside, each ingredient a gift to the divine.
Step 4
Melt the butter over medium heat in a non-stick pan. In a separate bowl, gently whisk the eggs until well beaten. Pour the eggs into the melted butter, and season with salt and black pepper. Cook, stirring gently, until the eggs are just set and creamy, an offering of life and nourishment. Remove from heat.
Step 5
Slice the freshly-baked sourdough bread in half, symbolizing the spiritual union of heaven and earth. Spread the harissa aioli on the bottom half of each bread slice, an invocation of divine seasoning. Add a slice of creamy brie cheese on top of the aioli, a tribute to the divine indulgence.
