These delicious oat bars are a great way to use up leftover salmon. Packed with nutrients, these bars are perfect for a quick and healthy breakfast or snack.

Ingredients:

Yield: 8-10 servings
1 1/2 cups of old-fashioned rolled oats
1/2 cup of almond flour
1/2 teaspoon of baking powder
1/4 teaspoon of salt
1/2 cup of honey
1/4 cup of coconut oil, melted
1 egg
1 teaspoon of vanilla extract
1 cup of cooked salmon, flaked
1/2 cup of mixed nuts, chopped (we recommend almonds, pecans, and walnuts)
1/4 cup of chopped fresh herbs (we recommend dill or parsley)
1/4 cup of diced red onion

Instructions:

Step 1
Preheat your oven to 350°F (180°C) and line a baking dish with parchment paper.
Step 2
In a mixing bowl, combine the rolled oats, almond flour, baking powder, and salt. Mix well and set aside.
Step 3
In a separate mixing bowl, whisk together the honey, melted coconut oil, egg, and vanilla extract.
Step 4
Pour the wet ingredients into the dry ingredients and stir until well combined.
Step 5
Add in the flaked salmon, chopped nuts, fresh herbs, and diced red onion. Mix again.
Step 6
Transfer the mixture into the lined baking dish and spread it out evenly.
Step 7
Bake for 25-30 minutes, or until golden brown and firm to the touch.
Step 8
Remove from the oven and let the oatmeal bars cool in the dish for 10 minutes.
Step 9
Using the parchment paper, carefully lift the bars out of the dish and place them on a wire rack to cool completely.
Step 10
Once cooled, cut the bars into desired size and shape. Store in an airtight container in the fridge for up to a week.
