Soba noodles are a popular Japanese dish made from buckwheat flour and are known for their nutty and earthy flavor. This recipe is a simple way to enjoy soba noodles in a quick and easy way.

Ingredients:

Yield: 2 servings
100g soba noodles
3 cups water
1 tsp salt
2 tbsp soy sauce
1 tbsp rice vinegar
1 garlic clove, minced
1/2 tsp sesame oil

Instructions:

Step 1
Fill a pot with 3 cups of water and bring to a boil. Add 1 tsp of salt to the pot.
Step 2
Add the soba noodles to the boiling water and stir gently to prevent them from sticking together. Cook for around 4-5 minutes, or until the noodles are tender but still firm.
Step 3
Drain the noodles in a colander and rinse them under cold water to stop the cooking process.
Step 4
In a small bowl, mix together the soy sauce, rice vinegar, minced garlic, and sesame oil.
Step 5
Toss the cooked soba noodles with the dressing in a large bowl until they are fully coated.
Step 6
Serve the soba noodles chilled or at room temperature, garnished with scallions or sesame seeds if desired.
