This hearty and flavorful dish is perfect for a cozy weeknight meal. Packed with protein and veggies, this chili is full of bold flavors and spices that will warm you up from the inside out. Plus, it's easy to make in a slow cooker, so you can set it and forget it while it cooks to perfection.
Ingredients:
Yield: 6-8 servings
1 pound of ground beef or turkey
1 medium onion, chopped
1 bell pepper, chopped
2 cloves of garlic, minced
1 can (28 oz) of crushed tomatoes
1 can (15 oz) of kidney beans, drained and rinsed
1 can (15 oz) of black beans, drained and rinsed
1 tablespoon of chili powder
1 teaspoon of cumin
1 teaspoon of paprika
1/2 teaspoon of cayenne pepper
Salt and pepper, to taste
Sour cream, shredded cheese, and chopped cilantro, for serving
Instructions:
Step 1
Start by browning the ground beef or turkey in a large skillet over medium-high heat. Once it's cooked through, drain off any excess fat.
Step 2
Add the onion, bell pepper, and garlic to the skillet and sauté for a few minutes until softened.
Step 3
Transfer the meat and veggie mixture to your slow cooker. Add in the crushed tomatoes, kidney beans, black beans, chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Stir well to combine.
Step 4
Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours. The longer you cook it, the better the flavors will meld together.
Step 5
Once the chili is done, give it a taste and adjust the seasonings as needed.
Step 6
Ladle the chili into bowls and top with a dollop of sour cream, shredded cheese, and chopped cilantro, if desired. Serve hot and enjoy!
