This hearty dish combines the smoky flavor of pork with the subtle bitterness of collard greens. A staple in southern cuisine, this dish satisfies both the palate and the stomach.

Ingredients:

1 lb smoked pork shoulder, shredded
1 bunch of collard greens, washed and chopped
1 onion, chopped
3 cloves of garlic, minced
2 cups of chicken broth
2 tablespoons of apple cider vinegar
1 tablespoon of brown sugar
1 teaspoon of paprika
1 teaspoon of red pepper flakes
Salt and pepper, to taste

Instructions:

Step 1
Place a large pot over medium heat and add the shredded pork shoulder, stirring occasionally for 5-7 minutes until the pork is slightly crispy.
Step 2
Remove the pork from the pot and add the chopped onion, sautéing until it becomes translucent, about 5 minutes.
Step 3
Add the minced garlic, paprika, red pepper flakes, and a pinch of salt and black pepper. Cook for another 2-3 minutes, stirring occasionally.
Step 4
Pour in the chicken broth and apple cider vinegar to deglaze the pot, scraping any browned bits from the bottom. Add the chopped collard greens and brown sugar, then stir well.
Step 5
Bring the mixture to a boil, then reduce the heat to low and cover with a lid. Let the greens simmer for 45-50 minutes, stirring occasionally, or until the greens are tender.
Step 6
Add the crispy pork shoulder back to the pot and stir well to combine. Simmer for another 5-10 minutes until the pork is heated through.
Step 7
Taste the greens and adjust seasoning as needed. Serve hot as a side dish or over rice for a heartier meal.
