This Italian classic dish is a perfect balance of pasta, lemon, garlic and cream. It is easy to make and takes only 15 minutes to prepare. You can also make a vegan alternative by skipping the heavy cream and butter.
Instructions:
Step 1
Begin by boiling the spaghetti in saltwater and save about 1 cup of pasta water for later use.

While the pasta is boiling, mince one garlic clove and sauté it in a pan with 2-3 tablespoons of extra virgin olive oil.

Add 4 tablespoons of butter to the pan.

Add the zest of a small lemon, reserving some for garnish.

Mix in the juice of a small lemon and let it cook for a few seconds.

Then mix in the heavy cream and add a pinch of salt.

Drain the pasta and mix it into the sauce until your pasta really absorbs all the flavors.

Add a little bit of reserved pasta water to loosen up the sauce and help the pasta absorb the flavor.

Let the pasta cook for another minute or two on low heat until the pasta absorbs all the sauce.

Serve hot and garnish with finely chopped parsley and extra lemon zest.
