Ingredients:

1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 cup brown sugar
1/2 cup unsweetened applesauce
1/4 cup vegetable oil
2 eggs
1 tsp vanilla extract
1 1/2 cups peeled and grated carrots
1/2 cup chopped walnuts (optional)

Instructions:

Step 1
Preheat your oven to 375°F. Grease a muffin tin or line with muffin cups.
Step 2
In a large bowl, whisk together the flour, baking soda, baking powder, salt, and brown sugar.

In a separate bowl, whisk together the applesauce, vegetable oil, eggs, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Fold in the grated carrots and chopped walnuts, if using.
