This bold and flavorful spread is perfect for entertaining or as a snack. Made with smoked liver and infused with spicy flavors, it's a versatile dish that can be enjoyed on crackers, toast, or even as a sandwich filling.

Ingredients:

Yield: 8-10 servings
1 lb of chicken liver, trimmed and cleaned
1/4 cup of olive oil
1 yellow onion, chopped
3 cloves of garlic, minced
1 teaspoon of smoked paprika
1/4 teaspoon of cayenne pepper
1 teaspoon of dried thyme
1 tablespoon of brandy
1 tablespoon of fresh lemon juice
Salt and pepper to taste

Instructions:

Step 1
Preheat your oven to 350°F (175°C).
Step 2
In a skillet, heat the olive oil over medium-high heat. Add the chopped onion and minced garlic and cook until soft and translucent, stirring occasionally.
Step 3
Add the chicken liver to the skillet and cook until browned on all sides, about 8-10 minutes. Season with salt, pepper, smoked paprika, cayenne pepper, and dried thyme, stirring occasionally to evenly coat the liver.
Step 4
Add the brandy to the skillet and cook for another 2-3 minutes, stirring occasionally until the brandy has evaporated.
Step 5
Transfer the liver mixture to a food processor and blend until smooth. Add the fresh lemon juice and pulse until well combined.
Step 6
Transfer the liver paste into a ramekin or serving dish and let cool.
Step 7
Refrigerate the liver paste until ready to serve.
Step 8
Serve the spicy smoked liver paste cold with crackers or toasted bread.
