This classic British dessert is a crowd-pleaser and a staple in any home-cooking lover's recipe repertoire. The warm, moist cake is enrobed in a rich, buttery toffee sauce, making it the perfect comfort food for cold winter days or anytime you want something sweet and indulgent.

Ingredients:

Yield: 8 servings
1 cup of dates, pitted and chopped
1 cup of boiling water
1 tsp of baking soda
1 tsp of vanilla extract
1 cup of all-purpose flour
1 tsp of baking powder
1/2 cup of unsalted butter, softened
1 cup of brown sugar
2 large eggs

Instructions:

Step 1
Preheat your oven to 350°F (175°C) and butter the sides and bottom of an 8-inch square baking dish. Set aside.
Step 2
Place the chopped dates in a bowl and pour the boiling water over them, then add the baking soda and vanilla extract. Mix well and set aside for 10 minutes to soften the dates.
Step 3
Sift the flour and baking powder into a mixing bowl. In another bowl, cream the butter and sugar until pale and fluffy, then gradually beat in the eggs one at a time.
Step 4
Add the flour mixture to the butter mixture and stir until just combined. Fold in the date mixture, including any liquid that has not been absorbed by the dates.
Step 5
Pour the batter into the prepared pan and bake for 35-40 minutes until golden brown and a toothpick inserted into the center of the cake comes out clean.
Step 6
While the cake is baking, make the toffee sauce by melting the butter and sugar in a small saucepan over medium heat, stirring constantly until the mixture turns into a smooth, glossy sauce. Remove from the heat and let it cool slightly.
Step 7
When the cake is ready, allow it to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Step 8
Poke holes all over the top of the cake using a skewer or toothpick, then pour the warm toffee sauce over the cake, allowing it to seep into the holes and coat the cake completely.
Step 9
Serve warm with a dollop of whipped cream or vanilla ice cream, and enjoy!
