Ingredients:
Yield: 12 servings
1 cup all-purpose flour
1 and 1/2 teaspoons baking powder
1/2 cup unsalted butter, room temperature
1 cup white sugar
5 eggs
1/2 teaspoon vanilla extract
1 cup whole milk
1/2 cup evaporated milk
1/2 cup sweetened condensed milk
1 and 1/2 cups heavy cream
1/4 cup powdered sugar
Instructions:
Step 1
Preheat your oven to 350 F (175 C) and grease a 9x13 inch baking dish with butter or cooking spray.
Step 2
In a medium sized bowl, sift together the flour and baking powder and set aside.
Step 3
In a large mixing bowl, cream together the butter and sugar until light and fluffy.
Step 4
In a separate bowl, beat the eggs with the vanilla extract until light and frothy, then gradually add them to the butter-sugar mixture.
Step 5
Add the flour mixture a little at a time, mixing until well combined.
Step 6
Pour the cake batter into the prepared baking dish and smooth with a spatula.
Step 7
Bake the cake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Step 8
While the cake is baking, mix together the whole milk, evaporated milk, and sweetened condensed milk in a large mixing bowl.
Step 9
Once the cake is done, remove it from the oven and let it cool for 10 minutes.
Step 10
Poke holes all over the cake using a fork or skewer.
Step 11
Slowly pour the milk mixture over the top of the cake, making sure to distribute it evenly so that the cake fully absorbs it.
Step 12
Refrigerate the cake for at least 2 hours, or overnight, to allow it to fully absorb the milk mixture.
Step 13
While the cake is chilling, prepare the whipped cream topping.
Step 14
In a large mixing bowl, add the heavy cream and powdered sugar and beat with an electric mixer until stiff peaks form.
Step 15
Once the cake is ready, spread the whipped cream topping evenly over the top of the cake.
Step 16
You can also decorate the cake with fresh fruit like strawberries or kiwis.
Step 17
Serve chilled and enjoy the sweet, milky goodness of Tres Leches Cake!
