Uni Spaghetti

This decadent pasta dish comes together quickly and combines the briny flavor of fresh sea urchin with the richness of butter, cream, and Parmesan cheese. Perfect for a special occasion or a luxurious solo meal.

Ingredients:

Yield: 4 servings
1 pound of spaghetti pasta
2 cloves of garlic, minced
4 tablespoons of unsalted butter, cut into small cubes
1 cup of heavy cream
1/2 cup of grated Parmesan cheese, plus extra for garnish
Salt and freshly ground black pepper, to taste
4-6 fresh sea urchin (uni) tongues

Instructions:

Step 1
Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, according to package instructions. Drain the pasta, reserving 1 cup of pasta water.
Step 2
While the pasta is cooking, heat a large frying pan over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds.
Step 3
Add the cubed butter to the garlic and let it melt, swirling the pan occasionally to prevent burning.
Step 4
Pour in the heavy cream and mix well. Bring the mixture to a simmer and let it cook for 2-3 minutes, stirring constantly.
Step 5
Add the grated Parmesan cheese to the sauce and stir until melted and smooth. Season with salt and pepper to taste.
Step 6
Add the cooked spaghetti to the sauce and toss until the pasta is coated evenly. If the sauce is too thick, add a few tablespoons of reserved pasta water to thin it out.
Step 7
Gently fold in the fresh sea urchin tongues, being careful not to break them up too much. Let the pasta heat through for another minute or two.
Step 8
Remove the pasta from heat and divide among four serving plates.
Step 9
Garnish each plate with more Parmesan cheese and freshly ground black pepper. Serve hot and enjoy!
