This plant-based version of caviar is a delicious and sustainable alternative, perfect for vegans or those looking to reduce their seafood intake. The tiny balls of agar agar, a seaweed-based gelatin, resemble the texture of caviar while being completely cruelty-free and environmentally friendly.

Ingredients:

Yield: 4-6 servings
1 cup water
1 teaspoon agar agar flakes
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon maple syrup
1/4 teaspoon smoked paprika
1/4 teaspoon turmeric powder
1/4 teaspoon black salt
1/4 cup vegetable oil
Optional: chives or parsley for garnish

Instructions:

Step 1
In a medium saucepan, pour the water and sprinkle the agar agar flakes over it. Let sit for 5 minutes to soften.
Step 2
Turn the heat on to medium and bring the water to a boil, whisking occasionally until the agar agar flakes dissolve completely.
Step 3
Add the soy sauce, rice vinegar, maple syrup, smoked paprika, turmeric powder, and black salt to the saucepan. Cook for 1-2 minutes, whisking continuously until the mixture is well combined and fragrant.

Remove the saucepan from heat and whisk in the vegetable oil. This will give the caviar a smooth and rich texture.

Using a dropper or a syringe, drop small droplets of the caviar mixture into a large bowl filled with cold water. The cold water will help the droplets form into small balls that resemble caviar.

Let the caviar balls sit in the cold water for 5-10 minutes to set. Once set, drain the water and transfer the caviar balls to a serving dish.
