Ingredients:

2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup vegan butter, room temperature (such as Earth Balance)
1/2 cup granulated sugar
1/2 cup brown sugar
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
2 cups vegan chocolate chips
3 tablespoons coconut cream
Instructions:
Step 1
Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking pan.
Step 2
Sift together the flour, baking powder, and salt in a medium mixing bowl.
Step 3
In a separate large mixing bowl, cream together the vegan butter, granulated sugar, and brown sugar until fluffy.
Step 4
Beat in the unsweetened applesauce and vanilla extract until combined.
Step 5
Slowly add the flour mixture to the butter mixture, mixing until just combined.
Step 6
Divide the dough in half and press each half into the bottom of the prepared pan.
Step 7
Bake for 12 minutes, or until the edges are lightly golden. Let cool completely.
Step 8
Once cooled, melt the chocolate chips and coconut cream in a microwave-safe bowl in 20-second increments, stirring after each increment, until fully melted and smooth.
Step 9
Pour half of the chocolate mixture on top of the cooled cookie dough in the baking pan. Spread the chocolate evenly over the dough.
Step 10
Place the baking pan in the fridge to chill for 5-10 minutes, or until the chocolate has firmed up.
Step 11
Remove the pan from the fridge and place the remaining cookie dough on top of the chocolate layer. Spread it out to cover the entire surface of the chocolate.
Step 12
Pour the remaining melted chocolate mixture on top of the second cookie layer. Spread it out evenly.
Step 13
Place the baking pan back in the fridge to chill for another 10-15 minutes, or until the chocolate has set.
Step 14
Remove the pan from the fridge and cut the vegan Kit Kat bars into desired sizes.
