This hearty and flavorful dish is perfect for a quick, healthy, and filling meal. The nutty flavor of the quinoa pairs perfectly with the savory sausage and earthy red beans, creating a satisfying and nutritious meal that is perfect for any time of the year.
Ingredients:
Yield: 4 servings
1 cup of white quinoa, rinsed thoroughly
1 can of red beans, drained and rinsed
1 pound of smoked sausage, sliced into bite-sized pieces
1 tablespoon of olive oil
1 onion, diced
1 green bell pepper, diced
2 cloves of garlic, minced
1 teaspoon of ground cumin
1/2 teaspoon of smoked paprika
1/4 teaspoon of cayenne pepper
2 cups of chicken broth
Salt and black pepper to taste
Cilantro or parsley leaves for garnish (optional)
Instructions:
Step 1
In a large pot, heat the olive oil over medium-high heat. Add the sausage and cook until browned on both sides, about 5-6 minutes. Remove the sausage from the pot and set aside.
Step 2
In the same pot, add the onion, green pepper, and garlic. Cook until the vegetables are soft and fragrant, about 5-6 minutes.
Step 3
Add the quinoa, cumin, smoked paprika, and cayenne pepper to the pot. Stir until the quinoa is evenly coated with the spices.
Step 4
Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the quinoa is cooked and most of the liquid has been absorbed.
Step 5
Add the red beans and cooked sausage to the pot. Stir until everything is evenly combined.
Step 6
Season the mixture with salt and black pepper to taste. Garnish with cilantro or parsley if desired. Serve hot and enjoy!
