Ingredients:

6 large eggs
1/4 cup of sour cream
1 tablespoon of lime juice
1/2 teaspoon of cumin
1/4 teaspoon of salt
1/4 cup of diced tomatoes
1/4 cup of diced red onion
8 small flour tortillas
Optional: chopped cilantro and hot sauce for garnish
Instructions:
Step 1
Place the eggs in a saucepan and cover them with cold water. Bring to a boil over high heat.
Step 2
Once the water is boiling, reduce the heat to low and simmer for 10-12 minutes.
Step 3
After 12 minutes, remove the eggs from the heat and transfer them to a bowl of ice water. Let them cool for a few minutes before peeling.

Once the eggs are peeled, slice them in half lengthwise and carefully remove the yolks, placing them in a separate bowl.

Mash the yolks with a fork until they are in small bits, then add the sour cream, lime juice, cumin, and salt. Mix everything well until it is creamy and well-combined.

Using a spoon, generously fill each tortilla with the yolk mixture. Top with diced tomatoes and red onion.

Garnish with chopped cilantro and a few dashes of hot sauce, if desired.
