When you've had a wild night and need a comforting and indulgent snack, these CBD-infused munchies will do the trick. Breaded and spiced chicken nuggets are paired with a cheesy Parmesan cream sauce and a crunchy garlic and herb crust. The perfect way to satisfy any munchies craving!

Ingredients:

Yield: 4-6 servings
1 lb boneless, skinless chicken breasts, cut into bite-size pieces
1 cup of all-purpose flour
2 eggs, beaten
2 cups panko bread crumbs
1/2 cup Parmesan cheese, grated
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/2 tsp dried oregano
1/2 tsp chili powder
1/2 tsp dried basil
1/2 tsp salt
1/4 tsp black pepper
1/4 cup CBD-infused olive oil
1/4 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
3 cloves garlic, minced
1/2 tsp red pepper flakes
1/2 cup heavy cream
1/2 cup Parmesan cheese, grated
1/4 cup marinara sauce
1/4 cup shredded mozzarella cheese

Instructions:

Step 1
Preheat the oven to 375°F (190°C).
Step 2
In a small bowl, mix together the Parmesan cheese and spices for the breading.
Step 3
Set up a breading station by placing the flour in one bowl, the beaten eggs in another bowl, and the panko bread crumbs and Parmesan cheese mixture in a third bowl. Mix well to combine.

Dredge the chicken pieces in the flour, shaking off any excess. Then dip them in the beaten eggs, allowing any excess to drip off. Finally, coat them completely in the seasoned bread crumbs and Parmesan cheese mixture, pressing gently to adhere.

Heat the CBD-infused olive oil in a non-stick skillet over medium heat. Once hot, add the breaded chicken pieces and cook for 3-4 minutes per side or until golden brown and crispy.
Step 6
Transfer the cooked chicken pieces to a baking dish. Spoon marinara sauce over the pieces and top with shredded mozzarella cheese.

In a separate bowl, combine the chopped parsley, chopped cilantro, minced garlic, red pepper flakes, and additional olive oil. Mix well to form a thick paste.

Spread the herb mixture over the top of the chicken pieces, pressing it gently into the crust to adhere.

Bake in the preheated oven for 15-20 minutes or until the chicken is fully cooked and the cheese is melted and bubbly.

While the chicken is baking, make the Parmesan cream sauce. Place a small saucepan over medium heat and add the heavy cream. Heat for 2-3 minutes or until the cream starts to bubble. Add the grated Parmesan cheese and stir until melted and smooth.

Once the chicken is done, let it cool for a few minutes before serving with a generous drizzle of the Parmesan cream sauce alongside.
