Ingredients:
Yield: 4 servings
4 boneless, skinless chicken breasts
1 cup of all-purpose flour
2 eggs, beaten
2 cups of panko bread crumbs
1 cup of grated Parmesan cheese
1 tsp of garlic powder
1 tsp of onion powder
1/2 tsp of dried oregano
1/2 tsp of dried basil
1/2 tsp of paprika
1/2 tsp of salt
1/4 tsp of black pepper
2 tbsp of olive oil
1/4 cup of fresh parsley, chopped
1/4 cup of fresh cilantro, chopped
3 cloves of garlic, minced
1/2 tsp of red pepper flakes
1/4 cup of olive oil
1/2 cup of heavy cream
1/2 cup of grated Parmesan cheese
Instructions:
Step 1
Preheat the oven to 375°F (190°C).
Step 2
Rinse the chicken breasts and pat them dry with a paper towel.
Step 3
Set up a breading station by placing the flour in one bowl, the beaten eggs in another bowl, and the panko bread crumbs, grated Parmesan cheese, garlic powder, onion powder, oregano, basil, paprika, salt, and black pepper in a third bowl. Mix well to combine.
Step 4
Dredge the chicken breasts in the flour, shaking off any excess. Then dip them in the beaten eggs, allowing any excess to drip off. Finally, coat them completely in the seasoned bread crumbs and Parmesan cheese mixture, pressing gently to adhere.
Step 5
In a separate bowl, combine the chopped parsley, chopped cilantro, minced garlic, red pepper flakes, and olive oil. Mix well to form a thick paste.
Step 6
Spread the herb mixture over the top of each chicken breast, pressing it gently into the crust to adhere.
Step 7
Heat the olive oil in a large nonstick skillet over medium-high heat. Once hot, add the chicken breasts and cook for 3-4 minutes per side or until golden brown and crispy.
Step 8
Transfer the chicken breasts to a baking dish and bake in the preheated oven for 15-20 minutes or until the chicken is fully cooked and the crust is golden brown and crispy.
Step 9
While the chicken is baking, make the Parmesan cream sauce. Place a small saucepan over medium heat and add the heavy cream. Heat for 2-3 minutes or until the cream starts to bubble. Add the grated Parmesan cheese and stir until melted and smooth.
Step 10
Once the chicken is done, let it rest for a few minutes before slicing. Serve with a generous drizzle of the Parmesan cream sauce over the top and a side of roasted vegetables or a green salad.
