This Japanese-inspired dish is the perfect blend of sweet and savory. Tender eggplant is glazed with a miso and honey sauce for a complex flavor that will leave your taste buds tingling.

Ingredients:

Yield: 4 servings
2 medium-sized eggplants, sliced lengthwise into 1/2-inch thick pieces
2 tablespoons of miso paste
2 tablespoons of honey
1 tablespoon of rice vinegar
1 clove of garlic, minced
1 tablespoon of vegetable oil

Instructions:

Step 1
Preheat your oven to 400 degrees F (200 degrees C) and line a baking sheet with parchment paper.
Step 2
In a bowl, mix together the miso paste, honey, rice vinegar, and minced garlic until they form a smooth and even glaze.
Step 3
Brush both sides of the sliced eggplants with the glaze, making sure to coat them evenly.
Step 4
Heat the vegetable oil in a non-stick pan over medium-high heat and add the eggplant slices. Cook for 3-4 minutes on each side or until they are lightly browned and tender.

Transfer the cooked eggplant slices to the lined baking sheet and bake in the preheated oven for 10-15 minutes, or until the glaze has caramelized and the eggplant is tender and golden brown.

Once the eggplants are done cooking, remove them from the oven and allow them to cool for a few minutes before serving.
