This healthy version of banana bread uses spelt flour instead of all-purpose flour, providing a nutty and wholesome flavor while still delivering the classic banana bread texture. Enjoy it as a healthy snack or for breakfast with your favorite spread.

Ingredients:

Yield: 1 loaf (about 8 slices) servings
2 ripe bananas, mashed
1/3 cup melted butter
1 teaspoon baking soda
Pinch of salt
3/4 cup brown sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 1/2 cups spelt flour

Instructions:

Step 1
Preheat the oven to 350°F (175°C). Grease a 9 x 5 inch loaf pan with butter or cooking spray.
Step 2
In a mixing bowl, combine the mashed bananas, melted butter, baking soda, salt, and brown sugar. Mix well until all the ingredients are fully incorporated.
Step 3
Add the beaten egg and vanilla extract to the mixture. Mix well until smooth.
Step 4
Sift in the spelt flour into the mixture, and fold in gently using a spatula until fully combined.
Step 5
Pour the batter into the prepared loaf pan. Tap it gently on a level surface to remove any air bubbles.

Bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.

Remove from the oven and let cool for 10-15 minutes in the pan before removing it from the pan and transferring to a wire rack to cool completely.
