Ingredients:
Yield: 6-8 servings
1 pound of ground beef or turkey
1 medium onion, chopped
1 bell pepper, chopped
2 cloves of garlic, minced
1 can (28 oz) of crushed tomatoes
1 can (15 oz) of kidney beans, drained and rinsed
1 can (15 oz) of black beans, drained and rinsed
1 tablespoon of chili powder
1 teaspoon of cumin
1 teaspoon of paprika
1/2 teaspoon of cayenne pepper
Salt and pepper, to taste
Sour cream, shredded cheese, and chopped cilantro, for serving
Instructions:
Step 1
Start by browning the ground beef or turkey in a large pot over medium-high heat. Once it's cooked through, drain off any excess fat.
Step 2
Add the onion, bell pepper, and garlic to the pot and sauté for a few minutes until softened.
Step 3
Add in the crushed tomatoes, kidney beans, black beans, chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Stir well to combine.
Step 4
Bring the mixture to a simmer, then decrease the heat to low and cover the pot with a lid. Let the chili simmer for about 30-40 minutes, stirring occasionally, until the vegetables are tender and the flavors have melded together.
Step 5
Once the chili is done, give it a taste and adjust the seasonings as needed.
Step 6
Ladle the chili into bowls and top with a dollop of sour cream, shredded cheese, and chopped cilantro, if desired. Serve hot and enjoy!
