This refreshing twist on traditional sushi combines the sweet and juicy flavors of watermelon with nutty and wholesome brown rice. Perfect as a light and healthy snack or as a creative appetizer for a summer party, this watermelon nigiri with brown rice is a colorful and delicious dish.

Ingredients:

Yield: 4 servings
1 cup of uncooked brown rice
2 cups of water
1 tablespoon rice vinegar
1 tablespoon sugar
1/2 teaspoon salt
4 slices of fresh and ripe watermelon, cut into bite-sized pieces
4 slices of cucumber, cut into thin strips
4 slices of avocado, cut into thin strips
4 small pieces of nori seaweed, cut into thin strips
Wasabi and soy sauce, to serve

Instructions:

Step 1
Start by cooking the brown rice according to the instructions on the package.
Step 2
While the rice is cooking, mix together the rice vinegar, sugar, and salt in a small bowl to create the sushi vinegar.
Step 3
Once the rice is cooked, transfer it to a large bowl and add the sushi vinegar, stirring it in gently.
Step 4
Take a small amount of the brown rice and shape it into a small rectangular shape, about the size of a piece of watermelon.
Step 5
Place a piece of watermelon on top of the rice, and wrap it with a small strip of nori seaweed, making sure to cover the sides of the rice and watermelon and leaving the top exposed.
Step 6
Repeat this process with the remaining watermelon and rice, each time adding a strip of cucumber or avocado on top of the watermelon before wrapping it in the nori seaweed.
Step 7
Serve the watermelon nigiri with soy sauce and a small amount of wasabi on the side for dipping.
